Meet Spencer Dunnison, the Founder and Head Roaster at Unveil Coffee Roasters.
His life story proves that following your curiosity and passion is always the right path. How many people have a degree in neuroscience and opera, and then pivot to become a highly trained chef working in Michelin-starred restaurants in NYC?
Then one more pivot. After honing his palate and technical skills as a chef, specializing in farm-to-table and nose-to-tail cooking, his childhood fascination with coffee persisted. Following experience in café service and eventually working as a barista trainer, he was drawn to roasting. It was the place where his intellectual curiosity and passion for flavor truly found their sweet spot. Roasting is technical and analytical: data, heat transfer, air flow, and curves you can chart and repeat. The work looks like a lab notebook—form a hypothesis, roast, taste, adjust, document, repeat. The goal is simple—unveil a coffee’s character—so the process must be precise and repeatable!
Unveil grew out of his kitchen roots in farm-to-table cooking: respect ingredients, credit the producers, reduce waste, and make every step transparent.
Now a recognized talent, he’s judged Canadian national championships and placed top ten nationally multiple times including 3rd at the 2025 Canadian National Coffee in Good Spirits Championship.
At Unveil, he focuses on transparent sourcing, low-waste practices, and clear roast notes so you know what you’re drinking and why it tastes that way. Curious, expressive, honest coffee—made with care.
